Vanilla – Ultrasonic Extraction

Vanilla is the world’s most popular favour which is extracted from the pods of Vanilla planifolia, Vanilla tahitensis, and Vanilla pompona. Apart from flavoring vanillin is gaining attention for its therapeutic  advantages involving  neuroprotection, anticarcinogenic, anti-quorum sensing and antioxidant properties.Vanilla extract is a million dollar market as it is one of the most liked flavors and fragrance ingredients in   perfumes, confectioneries, milk products, ice-creams, pharmaceuticals, liquor and other allied industries.

Advantages of Ultrasonic assisted extraction for Vanilla

  • Non-thermal technology
  • Lower energy consumption
  • High retention of heat sensitive compounds
  • Mild extraction conditions
  • Lower processing times
  • High quality and purity
  • Economically sound
  • Easy to operateand maintain
  • Minimal energy loss

Case study:

Jadhav et al.(2009) investigated the  potential benefits offered by ultrasound assisted extraction over conventional soxhlet extraction process. It was reported that ultrasonic extraction of vanilla was a better process in terms of processing time, yield and temperature.  The ultrasonic extraction yielded  140 mg/L vanillin in 1 h  at room temperature whereas the soxhlet extraction method resulted in only 66.7 mg/L of vanillin yield  at 95 ℃ and in presence of ethanol as solvent. So overall It was concluded that ultrasonic extraction intensifies the vanillin extraction process.
